Donguibogam

Translation

Glutinous rice 1 mal, washed a hundred times, steeped in a basin of water. After three days steam it through, douse it with the water it was steeped in, add white leaven, and ferment it in the usual way. After three more days it becomes a good wine; it is at its best when the white froth floats up on top. — Sokbang 俗方 (Donguibogam · Japbang)

Clinical commentary 臨床

A plain rice wine, and the only instruction that matters is to keep the steeping water and pour it back over the steamed rice — it carries the lactic bacteria that acidify the mash and keep spoilage organisms down, which is why a hundred washings and a long soak do not sterilise the grain so much as select for the right flora. The sign of readiness is the floating white head, the visible yeast bloom. There is no drug in it. Registered here because the Bogam prints it as a leaf of its own, not because it treats anything; the alcohol is the whole of its action. — Eui Young (Justin) Chung, L.Ac., Dipl. O.M.
